Kyrth Greystones Pickled Carrots
2 parts white vinegar
2 parts water
1/4 part salt
dill weed (big handful)
peppercorns (big handful)
Boil together, pour over peeled and sliced carrots, refrigerate for up to two weeks to develop the flavor.
