pie shell, 9-inch, not deep
1/2 lb mixed cheese, grated (Choose from: Colby, Gouda, Havarti, Mont. Jack, some mozzarella)
3 large eggs
1 tbsp butter, melted
1 tbsp sugar
Prick pie shell with a fork and pre-cook pie shell 10 minutes at 400 degrees. With a fork, beat the eggs, then stir inn the sugar, butter, and cheese. (Use a kitchen scale to measure out 8 oz. of cheese.) Pour egg/cheese into crust. Bake at 400 for 10 minutes, then lower heat to 325. Bake 15 minutes or more. Also for non-veg version, crumbled bacon on top is great! –
Note: no more than 4 pies in the oven at a time!
Feast notes: it took 4.5 hours to prepare 14 pies, working by myself, no interruptions.
